Prepare 5 Shallots
Prepare 2 cups Baby spinach
Make ready 1 large potato
Make ready 1 tsp Chopped garlic

Take as needed Salt
Make ready 1/2 tsp Turmeric

Instructions to make Spinach Potato fry:
Dice the potato into small cubes.
Chop the spinach leaves and keep aside.
Heat some oil in a pan and pop mustard and cumin seeds.
Add the chillie flakes asafoetida and turmeric powder to the oil on medium heat.
Now add chopped ginger,garlic and shallots.
Saute well till shallots are lightly transparent.
Add in the spinach leaves.Season with some salt and mix well.
Can add little water and once the spinach leaves are half done, add the potato cubes.
Put the spices and mix well.
Keep on medium heat till potatoes are cooked. Can add little water.
Finally garnish with some chopped cilantro and lemon juice and serve hot.
